Delicious Carrot Coriander Soup Recipe

Carrot and Coriander Soup Recipe Ingredients
175 grams (6 oz) of diced onion | 50 grams (2oz) of Butter |
500 grams (1 lb) sliced carrots | 1.2 Litre (2 pt.) of Vegetable Stock |
1 finely chopped garlic clove | 2 tbsp of Caster Sugar |
150 ml (5fl. oz) of Whipping Cream [fl. oz means Fluid Ounce] | 2 tbsp Coriander Leaves (fresh and chopped) |
Salt ( for taste ) | Black Pepper ( freshly ground ) |



Carrot and Coriander Soup Recipe: Step by step
Carrot and Coriander Soup Recipe Step #1 Take a heavy saucepan and add butter to it. Now place it on low flame.

Carrot and Coriander Soup Recipe Step #2 Add onion to the pan stir until it is soft. Now add carrots to the butter-onion and keep stirring for 5 more minutes. Keep garlic and stock for next step.
Carrot and Coriander Soup Recipe Step #3 Add vegetable stock and garlic to the pan and stir the mix. Stir frequently and wait until it boils. After the boil, reduce the flame to low and cook for 30 minutes.

Carrot and Coriander Soup Recipe Step #4 After 30 minutes, pour the mixture to a blender and blend it until it is puree. Keep cream and coriander ready for the next step.
Carrot and Coriander Soup Recipe Step #5 Take a clean pan and add the puree from blender to it. Now slow add coriander and cream to the pan while stirring.

Carrot and Coriander Soup Recipe Step #6 Taste with a spoon and adjust the salt and pepper as per taste. Heat until it is warm. Now serve the hot soup.
