It has a high fan following and is liked equally by kids as well as elders. Nankhatai is a delicious yummy crunchy eggless Indian shortbread cookie which is perfect to munch on during festivals. It is popularly available in the market as a tea time cookie but you can easily make it at home. It can be made using a combination of purpose flour, besan (chickpea flour) with ghee (clarified butter) and powdered sugar flavored with cardamom. It is good to add semolina (sooji) so that you can get crispy cookies. So try this easy recipe of Nankhatai and your Diwali snacking is more fun.

Nankhatai Recipe Ingredient #1: 1 cup all purpose flour (maida)
Nankhatai Recipe Ingredient #2: 3/4 cup chickpea flour (besan)

Preparation before Recipe
Prepare Dough: In a bowl sieve together flour, besan, sooji and cardamom powder. Add salt and mix till well combined. Using a hand mixer, mix together ghee with powdered sugar until fluffy. Add the flour and a tablespoon of milk and mix. Mix and knead a soft and smooth dough. Wrap the dough and place it in the refrigerator and refrigerate for 30 minutes.
Eggless Nankhatai Recipe: Step By Step
Nankhatai Recipe Step #1. Take out the dough from the refrigerator and make equal size small balls from the dough. Roll the balls between the palm and flatten slightly.
Nankhatai Recipe Step #2. Make a cross design on top of the cookie and put some nuts in the center and press them.
Nankhatai Recipe Step #3. Meanwhile preheat the oven to 180 degree celsius .
Nankhatai Recipe Step #4. Take a baking tray, grease it and place the cookies on it. Put the baking tray back in the refrigerator again for 20 minutes.
Nankhatai Recipe Step #5. After 20 minutes, place the baking tray in the oven and bake at 180 degree celsius for 16-18 minutes, till the bottom of the cookies starts turning light brown in color.
